Appenzeller Cheese

Appenzeller is a type of Swiss cheese. Its production has been active since the Middle Ages. The loaves weigh approximately 6-8 kg and have a diameter of 20-30  cm. In the factory they treat the cheese with a “sulz,” a fluid made of wine, yeast, salt and spices. My favorite way to use this tasty cheese is for raclette.
